Pumpkin has great healing benefits. It’s not only good for your skin, but also your insides. It help promote a healthy and beautiful glow. The problem with a lot of pumpkin spice things you get from the store is they’re loaded with refined sugars and who knows what else. That’s not healthy for you or your skin. With a little work, you can make your own great pumpkin bread that’s filled with that pumpkin flavor you crave but also free from refined sugar and, as a bonus, gluten free. This is perfect if you or someone you know has celiac disease or is gluten intolerant.
One cup cassava flour
One eighth cup coconut flour
One half teaspoon baking soda
One and a half teaspoon pumpkin pie spice
One teaspoon cinnamon
One teaspoon Anima Mundi Pau D’Arco powder
A pinch of salt
One half cup pumpkin puree (you can make your own or purchase an organic source)
One fourth cup pure maple syrup
Two tablespoons coconut oil or butter (melted)
One teaspoon vanilla
One fourth cup raw pumpkin seeds (pepitas)
Preheat your oven to 350 degrees.
Line your bread pan with wax paper or grease it with coconut or avocado oil.
Place your cassava flour, coconut flour, baking soda, pumpkin pie spice, cinnamon, Anima Mundi Pau D’Arco powder and salt into a bowl and whisk until it is well mixed to form your dry mixture.
Place your eggs, pumpkin puree, maple syrup, coconut oil or butter, and vanilla in a bowl and stir until the ingredients are creamy.
Slowly pour your dry mixture into your creamy mixture until it is thoroughly mixed.
Pour this batter into your bread pan.
Chop up any raw pumpkin seeds and sprinkle it on top.
Place in your oven and cook for forty five minutes or until a toothpick comes out clean. Allow the bread to completely cool and enjoy!
